Description
Simon Faure settled in Vergisson, in the Mâconnais, in the heart of the vineyards of southern Burgundy. In 2023, he carried out his first harvest, exclusively based on the purchase of Chardonnay grapes that he carefully selected. Passionate about respectful viticulture, he focuses on vinifications without any inputs, to reveal the purity and elegance of this emblematic grape variety of the region.

Its vintages, notably from the Saint-Véran or Pouilly-Fuissé appellations, express with precision and freshness the richness of the Mâconnais limestone terroirs, with a minimalist approach that sublimates each plot. A promising production to discover for lovers of authentic natural wines.

With 3 Ha of vines + additional grapes bought-in, Simon produced 10,000 bottles in 2023. The wines are vinified in old oak barrels and display a freshness with increasing complexity through the different labels from apple and citrus Mâcon-Villages, to more textured and creamy Saint-Véran to the complex Pouilly-Fuissé showing riper notes of honey and light roasted nuts.
